Jellied fish and crab salad is remembered by any Soviet viewer – Every year, most Russians watch The Irony of Fate, even if they can recite the film by heart. At the same time, many prepare dishes for the festive table to the dialogues of the heroes of the popular film.

Despite the fact that the heroes of the film do not have time to eat properly, the tables in Moscow and St. Petersburg apartments are full of festive dishes. Crab Salad

It is with this snack that the famous film begins. Galya invites her fiancé – Dr. Lukashin – to celebrate the holiday together at home, hoping for a romantic mood. “Well, these are my friends,” he objected, “and besides, you already made a salad of crabs.” In those years, Far Eastern crabs were sold in canned form and cost quite democratically – they were sometimes received in holiday “orders” or, if you were lucky, purchased in stores.

To produce canned food, a special “crab fleet” was created in the Soviet Union. The “Book of Tasty and Healthy Food” contains a certificate that crabs were canned directly on the floating factories of crab fishing ships. They were equipped with special equipment. These fleets fished in the Sea of ​​Okhotsk off the coast of Kamchatka, where there was a myriad of the best king crabs in the world, their meat was not inferior in quality and taste to the famous lobsters.

The Kamchatka commercial crab weighed up to 2–3 kg, its leg span reached 1 meter. At the floating plant, crabs were butchered – only males with a hard shell went into canned food, their meat was taken only from the joints of the legs. Tender pieces of meat, which after cooking were freed from the shell, were placed in jars lined with parchment, rolled up and sterilized. It was a delicacy, because among the many useful substances in crabs there are still many iodine, phosphorus and lecithin.

Salad recipe. For 1 jar of crabs, take 1 boiled turnip, 1 boiled carrot, 2-3 boiled potatoes, 1 fresh cucumber, 1 tomato. You will also need 100 g of green peas or bean pods, 100 g of lettuce, 1/3 cup of mayonnaise, 1 tablespoon of vegetable oil and 2 tablespoons of vinegar.

As indicated in the Book of Tasty and Healthy Food, prepared vegetables are cut into cubes, tomatoes into circles. Before serving, cut a green salad and put it in a salad bowl in a slide. Vegetables are placed around the hill in separate “bouquets”. Pieces of crabs (without juice) are placed on a green salad in the center of the hill. When serving, the vegetables should be lightly salted and poured with a dressing of oil and vinegar with the addition of crab juice. Crabs should be poured with mayonnaise and garnished with lettuce leaves.

“What a disgusting thing your jellied fish is!”

There were three main dishes on Nadia’s New Year’s table: fish aspic, roast beef and salad. Traditionally, tangerines flaunted on the table, there were also cuts of scarce serveral, eggs with mayonnaise, a jar of sprats, beetroot salad and green peas. The phrase about jellied fish uttered by both Zhenya and Ippolit was not in the script – it was improvised by Yuri Yakovlev. All dishes on the festive table were real. So the actor said the famous phrase sincerely – the fish turned out to be extremely tasteless.

In preparation, this dish can not be called difficult. If you follow the recipe from the Book of Tasty and Healthy Food, the hostess can still succeed. Soviet chefs offered two recipes for aspic: from pike perch and from sturgeon, while the cooking principle was the same.

Aspic pike perch recipe. Pike perch must be cleaned and washed, cut into pieces. Bones, a head without gills, stripping and caviar are put in a saucepan, add roots, onions, salt, 1–2 pcs. bay leaf, pour water and put to boil. After 15–20 minutes, pieces of pike perch are placed in the same pan for cooking. When the pieces of fish are cooked, they must be taken out, put on a dish in the form of a whole fish, leaving small gaps between the pieces, and put the dish in a cold place. Drain the resulting broth and cook 2 or 2.5 cups of jelly. To do this, you need to dissolve the soaked gelatin in it, then boil it and strain it through a napkin.

Each piece of pike perch is decorated with slices of lemon, carrots, cut into stars, a leaf of greens and poured with the resulting jelly in 2-3 doses so that the decorations do not budge and the pieces of fish remain immersed in jelly. The dish must be kept in a cold place until the jelly hardens. Red cabbage, potato salad, cucumbers – both fresh and salted – are served with pike perch.

For 1 pike perch weighing 1–1.2 kg, 10–12 g of gelatin, 1 piece of roots and an onion head are used.

“What do you want to put? Salad or roast beef?

Nadya asks Ippolit this question, trying to soften it after they kicked Lukashin out of the apartment for the first time. It didn’t help her build a relationship, but roast beef may well make the New Year’s table more dietary.

Roast beef recipe. The sirloin, thin edge or tenderloin of beef should be washed, the tendons should be removed, salted, the whole piece should be placed on a baking sheet or pan heated with oil – lightly fried. After that, bake in the oven until done. Every 10-15 minutes you need to water the meat with the resulting juice. If there is little juice, you can add broth or water. Cooking time depends on the level of doneness you want – well done, medium or rare.

Ready roast beef is removed from the pan, then cut into slices and placed on a dish. As a side dish, you can offer sliced ​​\u200b\u200bcarrots and green peas seasoned with oil. It is also good to use boiled, fried or mashed potatoes, as well as planed horseradish. The meat is poured with strained juice, which was formed during frying, and melted butter. Cucumbers and green salad are served separately with roast beef.

Nutritionists note that the heroes of the popular New Year’s film prepared quite balanced dishes for the festive table. So it is quite possible to follow their example.
